2 Just as with everybody, pronouns and adjectives referring back to everyone are often plural, ‘the absence', as the OED puts it, ‘of common gender rendering this violation of grammatical concord sometimes necessary'. Examples: Every one Sacrifices a Cow or more, according to their different Degrees of Wealth or Devotion—Dr Johnson, 1735; Everyone then looked about them silently, in suspense and expectation—W. H. Mallock, 1877; Everyone was absorbed in their own business—A. Motion, 1989; the classical allegories look like surreal school outings in which everyone got to take their clothes off, and then was sorry—M. Vaizey, 1991.
Not everyone favours this practice, however: Well, I'm afraid it's everyone for himself—R. Hall, 1978 (NZ); Everyone has his own image of a city—his own image of the Eiffel Tower…—Art Business News, 2004.
